Wilted Baby Arugula and Mango Salsa Salad recipe

The sweetness of the mango perfectly compliments the bitter, pepperiness of the arugula. I came up with this combo sort of by accident last night and wanted to share.

- Couple handfulls of baby Arugula lettuce
- 1 tablespoon olive oil
- Mango Salsa

I got the baby arugula in a pre-washed package and the Mango Salsa pre-made at Whole Foods.

Heat the oil in a saute pan on medium heat until hot. Wilt the baby arugula in the hot oil for a minute or two, tossing regularly.

Serve warm topped with a couple spoons of mango salsa as dressing.

I'll have to take a picture next time I make it, too fast with the fork this time.
